Potato chip cookies

My favorite part of Christmas is making cookies to give out to family and friends. I always have my traditional standbys, and then I love to find the odd little gems likes these.

I wanted to share them with you!!!





These are a fun variation of a butter cookie. Salty and sweet, dense and flaky.

1 c. butter
1/2 c. sugar
1 t. vanilla
2 c. flour
1 c. crushed potato chips


Cream butter, sugar and vanilla. Mix in flour and chips. Dough will be really sticky. Turn out onto a heavily floured surface and kneed in about 1/2 cup more flour. Carefully roll it out (it is tuff to work with) and cut into 2" circles. I used a small glass. Put on ungreased cookie sheet - 350 degrees for 13 minutes.

Let cool completely. Leave them as they are or make sandwich cookies out of them with a chocolate filling!

Chocolate Ganache
2 c. whipping cream
1 - 12 oz pkg semi sweet choc. chips

Bring the whipping cream to a simmer in a heavy sauce pan. Stir a lot so it won't scorch When it is simmering add the bag of choc chips. Stir til the chips have melted and continue to stir for about 4 more minutes.

Let the ganache COMPLETELY cool. It can take several hours. I make mine the nite before and keep it in a covered container in the ice box til I need to use it.

  1. Oh my gosh...I've never heard of these cookies before! Chocolate and potato chips together? Salty and sweet all at once would be heaven in my mouth... Wishing you a wonderful new year!
